

It is one of the delicious kebab of traditional Bursa cuisine. Besides, This flavour is a simple form of “Hünkâr Beğendi”, one of the flavours of Ottoman palace cuisine. You can find this flavour in famous restaurants of Bursa.
Lamb meat, eggplant, cheddar cheese and butter are used to make this kebab. First of all, lamb meat is chopped in cubed form and roasted in a pot with diced onion. Flour and water are added to the roasted meat and cooked in the pot. Eggplants are peeled off and diced, after roasted on the stove. Roasted eggplants are taken to corner of the tray for baked, after they are cooked with butter, flour and milk. At the same time cooked meats are also taken to another corner of the tray for baked. Finally, after they are baked in the oven for 15 minutes, the kebab is ready for service.
