Gummy Kebab

This kebab, which is one of the original flavors of Bursa cuisine, is called gummy kebab due to the use of gum mastic in it.

First, chopped lamb meat is roasted in a saucepan and hot water is added on it. Then, the kebab’s mash is prepared with boiled potatoes, cheddar cheese, milk and butter. mastic gum, rose water and garlic are also added in the mash and mixed. Finally, lamb meat, which is cooked, is placed on it and served. This flavor is usually made on special days. Besides, you can find this kebab in famous and traditional restaurants of Bursa.
